Recipe: Fruit Pizza

This is one of my favorite treats.  I had never had it until I met Molly, but it was a staple of her mother’s.

INGREDIENTS

1 roll of sugar cookie dough
8 oz cream cheese
1 cup powdered sugar
3-4 bananas
1 can strawberry or raspberry pie filling
20 oz crushed pineapple, drained
2 cans mandarin oranges, drained
Kiwi
Pecans, chopped

Directions

Press sugar cookie dough into ungreased cookie pan.  Bake at 350 degrees for 13 minutes, cool completely.  Mix cream cheese and powdered sugar.  Spread cheese mixture on dough.  Layer sliced bananas, pie filling, pineapple, mandarin oranges, kiwi and pecans.  Cover and refrigerate at least 4 hours.

Variants: Start with sugar cookies, then add toppings. Also, just try cookie base, cream cheese frostings and fresh berries.

Recipe: Swedish Meatballs and Mashed Potatoes

Tonight, Molly made some Swedish Meatballs and Mashed Potatoes. Swedish Meatballs is a dish that my Mother and Aunt used to make that Molly and I both enjoyed. I think the result tonight was the best I’ve ever had.  So, I’ve decided to post her recipe on here for those interested.

INGREDIENTS

1 2/3 cups evaporated milk
2/3 cup chopped onion
1/4 cup fine dry bread crumbs
1/2 teaspoon salt
Dash pepper
1 pound ground round
2 teaspoons butter
2 beef bouillon cubes
1 cup boiling water
1/2 cup cold water
2 tablespoons all-purpose flour
1 cup evaporated milk
1 tablespoon lemon juice

DIRECTIONS

Combine 2/3 cup evaporated milk, onion, crumbs, salt and pepper. Add meat; mix well, chill. Shape meat mixture into 1-in. balls. In large skillet, brown meatballs in butter. Dissolve bouillon cubes in boiling water; pour over meatballs and bring to boil over medium heat. Cover; simmer for 15 minutes. Meanwhile, blend together cold water and flour. Remove meatballs from skillet, skim fat from pan juices and reserve juices. Stir 1 cup evaporated milk and flour/water mixture into pan juices in skillet; cook, uncovered, over low heat, stirring until sauce thickens. Return meatballs to skillet. Stir in lemon juice.

She combined that with some homemade mashed potatoes.

Ingredients

6 Medium potatoes
2 tablespoon butter/margrine
1/3 Cup Milk
Parsley to taste

Directions

Wash and peel potatoes, cut into inch cubes.  In large pot, cover potatoes with cold water.  Heat on stove over high heat until boiling, reduce heat to medium-high.  Gently boil potatoes until tender and strain excess water.  Mash potatoes with an electric mixer on low speed, add butter and milk.  Sprinkle with parsley and serve warm.

Mashed Potatoes covered with Swedish Meatballs and gravy = tasty treat.
